Following are some recipes from my Eat Your Colors™ book. You will feel best and function best if you eat foods that are harmonious with your body type. VAL GALS CHERRIES JUBILEE (A classic, easy to make, an impressive display and a refreshing light dessert.)
Time: about 20 minutes to prepare and serve; Serves 8
Ingredients: ½ cup sugar, preferable raw or evaporated cane juuice (Sucanat) ¼ cup arrowroot starch or cornstarch 1 28-ounce jar of black cherries (Red Hills Fruit Co., www.dundeefruit.com) Can also use 1 pound frozen cherries that have beeen thawed ¾ cup (approx) Knudsen Black Cherry juice (Need nearly 2 cups if using frozen cherries) ½ teaspoon orange zest 1/3 cup Kirshwasser (cherry brandy) 1 quart of rich vanilla ice cream Directions: Drain the cherries into a colander set over a bowl to catch the juice. Set the cherries aside and pour the juice into a 2 cup measure. Add Knudsen's Black Cherry juice to make 2 cups total. Mix the sugar and arrowroot and place in a 10-inch saute' pan or chafing dish pan. Slowly add the cherry juice and stir into the dry ingredients. Heat carefully, stirring until the sauce is bubbly and thickens. Stir in the zest and cherries. Heat slowly for about 10 minutes while heating the Kirshwasser and dish up the ice cream in ½ cup servings. When the Kirshwasser is just warm enough to begin evaporating, pour it over the bubbling cherries. Using a long stemmed match or lighter, ignite the Kirshwasser. There will be a lovely blue flame covering the cherries. Begin carefully folding the flaming Kirshwasser into the cherry mixture with a long handled spatula. Flaming burns off the alcohol but leaves a delightful cherry brandy flavor in the sauce. When the flames go out, quickly ladle ½ cup of cherries jubilee over the ice cream. Val Gals is a local organization of about 100 women friends and acquaintances who dress in red or purple, bring little gifts and have lunch each Valentine's day to celebrate friendship. The two shakes below are targeted at those of you with special nutrition needs. If you have problems with allergies, are recovering from an illness, or wish to build immunity these are for you. Green Meanie Shake - Tropical Fruit
Prep time: 5 minutes; 1 - 12 oz. serving
Ingredients: ½ cup apple or tropical juice (pineapple, coconut, papaya) that has a intense flavor 1 scoop Pea (legume) Protein Powder (NOW Foods #2135) 1 Tablespoon Virgin Coconut Oil (NOW Foods #1726) 1/3 cup cut-up fruit/herb combo (banana, mango, papaya, fresh peppermint herb, grated gresh ginger root) ¼ teaspoon Probiotic Defense Powder (NOW #2917) ½ teaspoon AHCC mushroom complex Powder (NOW #3035) Directions: Mix all the ingredients in a blender and enjoy. It helps to have the beverage really cold, but the veggie version is very tasty when warmed a little. Be sure and not heat it too much as B and C vitamins can be lost Per serving: 370 cal., 14g total fat, 13g saturated fat, 1g unsaturated fat, 0mg cholesterol, 0mg sodium, 33mg carb., 4g fiber, 29g protein. Green Meanie Shake - Garden Veggie
Prep time: 5 minutes; 1 - 12 oz. serving
Ingredients: ½ cup low-sodium tomato, V-8, carrot or other veggie juice 1 scoop Pea (legume) Protein Powder (NOW Foods #2135) 1 Tablespoon MCT Oil (NOW Foods #2199) 1/3 cup veggie/herb combo (cut-up celery, cucumber, fresh basil herb, dill, parsley, garlic) ¼ teaspoon Probiotic Defense Powder (NOW #2917) ½ teaspoon AHCC mushroom complex Powder (NOW #3035) Directions: Mix all the ingredients in a blender and enjoy. Per serving: 336 cal., 14g total fat (medium chain triglycerides), 0mg cholesterol, 140 mg sodium, 24mg carbohydrate, 5g fiber, 30g protein. |
